Quick Pot Pies Recipe
This 30 minute meal offers a quick comfort food without sacrificing that delicious chicken pot pie taste.

1 pkg. Sister Schubert's® Dinner Yeast Rolls, (10 rolls)
3 tbsp. butter
1/3 cup all-purpose flour
1 1/2 cups chicken stock
1/2 tsp. fresh thyme, chopped
1 tbsp. chopped fresh parsley
Salt and pepper, to taste
1 1/2 cups chopped cooked chicken breast
1/2 cup frozen carrots and peas, thawed and drained well
Preheat the oven to 350°F. Prepare Sister Schubert’s® Dinner Yeast Rolls according to package directions. Using a serrated knife remove the upper 1/3 portion of each roll and set aside. Gently remove the center part of bottom portion of each roll.
Melt the butter in a small saucepan. Add the flour and stir for 1 to 2 minutes. Pour in the chicken stock and whisk together until the sauce is smooth. Add the thyme and parsley and stir for 2 minutes. Season with salt and pepper Add chicken, peas and carrots and cook for 2 minutes.
Spoon a generous amount of the chicken filling into each hollowed out roll and cover with the lid. Serve.
