Springtime Vegetable Noodle Soup

This soup is a springtime favorite. This recipe uses Reames® Noodles, zucchini, carrots, fresh parsley and garlic is perfect for those April showers kind of days.

Cook Time: 60 minutes
Ready In: 85 minutes


One (12 oz.) pkg. Reames® Noodles, prepared according to directions 
2 tbsp. olive oil
1 clove garlic, minced
1 cup chopped onions
1 cup diced carrots
8 cups chicken stock
1 medium zucchini, diced
1 cup chopped sugar snap peas
1 cup frozen peas, thawed
2 cups green and or wax beans, cut into 1-inch pieces
1/2 tsp. dried thyme
1/4 cup fresh chopped basil
2 tbsp. coarsely chopped fresh parsley


Heat oil in a large pot; add garlic, onions and carrots and sauté for 3 minutes. Add chicken stock, zucchini, peas, beans, thyme, basil and parsley and simmer for 30 minutes. Add Reames Noodles and simmer 10 more minutes. Serves 8.
