Blue Cheese Vegetable Snacks

Cherry tomatoes and English cucumbers are hollowed out and filled with Marzetti Blue Cheese Veggie Dip and sprinkled with parsley and bacon.

INGREDIENTS

  • 1/2 cup Marzetti® Blue Cheese Veggie Dip
  • 12 Cherry tomatoes
  • 1 English cucumber
  • 10 to 12 ribs Celery, cut into 4 inch pieces
  • 2 tbsp Finely chopped parsley
  • 2 tbsp Chopped cooked bacon

PREPARATION

Hollow cherry tomatoes; turn them upside down on paper towels to drain. Re-invert them. Cut cucumber into 1¼ disks. Using a small spoon, remove seeds from center of disk. Using a small spoon or pastry bag with a wide tip, fill cavities of vegetables with Marzetti Blue Cheese Dip and sprinkle with chopped parsley and bacon. Refrigerate until ready to serve. Snacks can be prepared 2 hours in advance of serving. This recipe can be easily increased.
