INGREDIENTS

  • 1 bag (16 oz.) Reames® Homestyle Egg Noodles
  • 4 tbsp. butter, divided
  • 1 (8 oz.) pkg. sliced mushrooms
  • 1/2 cup chopped onions
  • 3 tbsp. all-purpose flour
  • 1 1/2 cups chicken stock
  • 1 1/2 cups half and half or milk
  • 2 tbsp. Dijon mustard
  • 8 oz. grated Swiss or Emmentaler cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh chopped parsley
  • 6 slices cooked bacon, crumbled

PREPARATION

Preheat oven to 375°F. Butter a 9 x 13-inch baking dish. Prepare Reames Home Style Egg Noodles according to package directions. In a sauté pan, melt 1 tablespoon butter; add sliced mushrooms and sauté until golden brown and all moisture is released. In a saucepan, melt  the remaining 3 tablespoons butter over medium heat; add onions and cook until they are tender. Add flour and stir for 2 minutes. Add chicken stock, half and half and mustard and stir until the sauce thickens. Remove from heat and stir in Swiss cheese. In a small bowl, combine the Parmesan cheese and parsley. Layer the sauce, noodles, mushrooms and bacon in the baking dish and top with Parmesan and parsley. Bake 20 to 30 minutes or until hot. Serve.
