INGREDIENTS

  • 2/3 cup Marzetti® Ginger Mango Vinaigrette Dressing
  • 1/2 English cucumber, cut in 1/2
  • 1 cup Fresh pineapple, cut into 1/2" pieces
  • 1/2 cup Jicama, cut into 1/2" pieces
  • 1 Red pepper, cut into 1/2" julienne pieces
  • 1/4 Finely diced red onion
  • 2 tbsp Chopped fresh mint
  • 1 pkg. (5-6 oz) Mixed greens
  • 1/2 cup Cashew pieces

PREPARATION

In a bowl, combine, cucumber, pineapple, jicama, red pepper, red onion, and mint with 1/3 cup T. Marzetti Ginger Mango Dressing. Arrange mixed greens on a platter; spoon cucumber mixture over the top of greens. Sprinkle with cashews. Drizzle with remaining T. Marzetti Ginger Mango Dressing. Serve.
